Las Vegas has an array of fine dining experiences available for visitors. Even several hours away from the ocean, Las Vegas’s sushi scene is one that we can’t get enough of. These restaurants offer unique creations and quality sushi that will make you wish you could come back week after week for more. Thursday afternoon we packed and were on the road to Frandy Park Campground for a weekend of fun at Kernville Kampout. Kernville Campout is an annual motorcycle ride hosted by Biltwell at the Kern River. It’s a weekend dedicated to riding motorcycles with your friends and having fun.
Pork belly burnt ends are delicious. We love making these on the Treager Renegade Elite on a lazy Sunday to enjoy before our main course. Burnt ends are typically made from brisket, but we really enjoy this new trend using pork belly instead of Brisket for our burnt ends. They are very succulent, rich, and have great flavor by the end of the cook. These are a great appetizer or snack, but work well in main courses as well. We enjoy pork belly burnt ends over a bed of cilantro rice with a poblano corn salad, guacamole, fresh pico de gallo, and some veggies. Make sure to enjoy with a spicy margarita!
Come home to the smell of fresh bread and enjoy this rosemary olive oil load with our Garlic, Thyme, Parmesan Potato Stacks. This bread is so hard to stop eating so make sure you’ve got a full table to dinner so you don’t finish it while you’re still cooking!
After spending the day at the beach in Encinitas, grab dinner at one of these restaurants. Although we probably have another 30 restaurants to add to this list, here’s a few to get you started!
These potato stacks are a great side dish for roasted chicken or with mild white fish like sea bass. They are very similar to scalloped potatoes and only require a few ingredients. We highly recommend serving these alongside our rosemary olive oil garlic bread.
Summertime campouts: dusty boots and collecting branches for a cackling fire that usually is maintained until about 2am when everyone has had too many beers and too much whisky to care. We curl up in Mexican blankets on the sand and roast sausages with the hum of Credence Clearwater Revival or The Scorpions in the background.

If I could have Chinese take out every single night, I probably would. We’re always searching for new ways to make health, Asian inspired dinners. We try to incorporate as many veggies as possible at dinner time. Sometimes we have the stir fried veggies on their own, or serve over a bed of white rice or pan-fried lo mien noddles. Enjoy!
