Taco Tuesdays call for margaritas and mariachi music. It’s one of our favorite excuses to bring everyone together and make great food during the week. After falling in love with our braised beef short ribs with rustic root vegetables, we decided to try a new take on our short rib and make them for tacos. This was a favorite. I am happy to say we were scraping the pans clean to make more tacos as the night went on.

We write a lot about barbecuing and our favorite recipes, but I want to take some time in the next few weeks to share some healthy, delicious meals that we enjoy preparing at home. I’ve had quiet a few of you reach out asking for simple, healthy meals that you can prepare in your own kitchen. A very easy crowd pleaser is pan seared salmon with sautéed vegetables. While you can choose whichever veggies you’d like, I normally like to do sweet potato, onion, mushrooms, and sometimes some zucchini together. This recipe is filling and only requires a few ingredients.

Veggie Stir Fry
If I could have Chinese take out every single night, I probably would. We’re always searching for new ways to make health, Asian inspired dinners. We try to incorporate as many veggies as possible at dinner time. Sometimes we have the stir fried veggies on their own, or serve over a bed of white rice or pan-fried lo mien noddles. Enjoy!
